ACHAAR GOSHT RECIPE

A tangy, pickle-spiced achaar gosht made with Namak Mirch Achaar Gosht Masala, with masala-stuffed green chillies simmered into a rich gravy.

Ingredients

  • 1 kg chicken/meat with bones
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 8 green chillies
  • 3 tbsp lemon juice
  • 6–7 medium tomatoes, chopped
  • ½ kg yogurt
  • Namak Mirch Achaar Gosht Masala (½ packet)
  • ½ cup oil

Method

  1. Mix 2 tbsp of the achaar masala with the lemon juice. Slit and clean the green chillies and fill them with the masala and lemon juice mixture.
  2. Add the chopped tomatoes to ¼ cup of the oil and cook until soft, then mash them completely and remove.
  3. In the remaining oil, add the garlic, ginger, chicken/meat and Namak Mirch Achaar Gosht Masala. Add the yogurt and cook on high heat for 5 minutes. Add water and cook until the chicken/meat is tender.
  4. Add the tomato mixture and stir-fry on high heat for 5 minutes. Place the chillies in the gravy, turn the heat to low and cook until you see the oil rise to the top.

Frequently Asked Questions

Can I make achaar gosht ahead of time?
Yes — the gravy-based curry holds well. You can cook it fully in advance and reheat gently before serving; the oil rising to the top is the sign it's fully cooked.
How are the green chilies prepared in this dish?
Slit and clean the green chilies, then fill them with a mixture of Namak Mirch Achaar Gosht masala and lemon juice. They are then placed in the gravy and cooked on low heat until the oil rises on top.
What gives achaar gosht its tangy flavour?
The tartness comes from the combination of lemon juice, chopped tomatoes, and yogurt used in the recipe alongside Namak Mirch Achaar Gosht masala.
