INGREDIENTS:

-1/4 cup oil + 3tbsp oil

-1kg meat /chicken

-2 tbsp garlic paste + 1tbsp ginger paste

-3tbsp Namak Mirch Koila Karahi Masala

-3-4 chopped tomatoes

-1-2 chopped onions 

-1tsp tomato paste ( optional)

-sliced ginger and chilies for garnishing.

METHOD:

– Heat 1/4 cup of oil in a saucepan and add chopped tomatoes. Cook until tomatoes are soft and tender.

– In the remaining oil, add finely chopped onions. When the onions change color add garlic and ginger and fry for a minute.

– Add chicken/meat and fry for 4 to 5 minutes (or more for meat) along with Namak Mirch Koila Karahi masala and mix well. Add tomato paste and water and mix well. Cover and cook on medium heat for 20-25 minutes till the chicken is tender.

-Heat a piece of coal, put it in the karahi with a few drops of oil for smoke, and let it sit with the lid closed for 5-10 minutes. Remove the coal and serve with sliced ginger, chilies, and hot naans.
